An impressive central atrium makes a massive impact at this smart hotel close to Gatwick's North Terminal. The menu at La Brasserie, with its neatly laid tables and contemporary artworks, takes a modern British path, with a French accent; there are lots of original ideas and a sure hand at the stove. Start with seared scallops partnered by crisp chicken wings with teriyaki gel, or duck and veal terrine with plums, pickled girolles and ginger wine jelly. Next up might be rump of lamb roasted with thyme with squash, green beans, mushrooms and Madeira jus, or cod fillet with clams, lobster bisque, sea vegetables and spätzle.
