The Castle, for such it is, looks like the kind of place you'd happily pay the National Trust for the chance to look around, a nearly millennium-old fortification at the foot of the South Downs. It did time as a Royalist stronghold in the Civil War. Anywhere that is entered via a portcullis has more than a touch of class, an impression reinforced by the dining rooms with their armoury, tapestries, barrel-vault ceilings and lancet windows. Paul Peters produces assertive modern dishes with plenty to say for themselves, opening with confit rabbit in a blackberry gel cylinder with pistachio granola, or gently charred barbecued eel dressed in wasabi with yuzu and cucumber, prior to halibut with apple, smoked raisins and capers in a spicy mussel sauce. Meat dishes look opulent, as with the carefully rendered mallard breast and leg that come with turnips, crosnes and chervil root in a light red wine jus. Finish with firmly set vanilla pannacotta, cinnamon ice cream and apple caramel, or the ultimate indulgence of mascarpone with flavours of chocolate, coffee and Tia Maria.
