A William IV house in mellow Bath stone, the Priory is smothered in climbing ivy, and located in a quieter part of the city, away from the milling throngs. With views of the lush gardens and outdoor terrace kitted out with parasols, the dining room is an elegant, white-linened sanctuary, where Michael Nizzero uses classical techniques to bring out the best in top-notch ingredients, all presented with a due sense of flourish. Beef tartare bound with an emulsion dressing of oyster topped with raw quail egg, served with crackly pumpernickel, might set things off, or there may be citrus-dressed Cornish crab with avocado for a simple but effective opener. Then comes richly treated roast halibut in a concentrated Madeira jus with wild mushrooms, celeriac and walnuts, or perhaps slow-cooked breasts of pigeon with Pink Firs and cabbage in a lime-tinged sauce. Desserts are ingeniously conceived to be light and refreshing, as well as delivering an array of thrilling flavours, as witness a pistachio cake that comes with spiced poached pineapple and frozen yogurt, or buttermilk mousse with poached rhubarb and mizuna. Spelt bread makes an appetising change to the ubiquitous sourdough, and the appetiser itself might be something like mackerel with pear in a thin avocado soup.
