Start with an impressive Creedy Carver duck composition involving smoked breast, confit and parfait, with hazelnuts and poached quince to leaven the richness. A perfectly tuned main of Cornish stone bass with roasted cauliflower, golden raisins, almonds and curry displays commendable lightness of touch, or a more robust duo of beef fillet and braised ox cheek with potato purée, watercress, black truffle, and red wine essence might appeal. Harmonious flavour combinations continue at dessert, with an on-trend trifle with poached figs, almond sponge and Amaretto cream.
