Unshouty hues of cream and baby blue, stone floors and chunky wood tables beneath a soaring, heavy-beamed roof set the tone in this rustic-chic eatery on a 200-acre country estate. The kitchen takes a modernist approach, using calender-correct regional produce and treatments to deliver a starter of crab with sweet-and-sour apple, yuzu purée, pickled mooli radish and sea fennel, ahead of pork belly and pig's cheek matched with langoustine, caramelised cauliflower purée and braised spring onions. Dessert is an opportunity to show a bit of ambitious technique, delivered via a deconstructed passionfruit cheesecake with coconut ice cream, passionfruit sorbet and coconut crumble.
