At the heart of Middleton Lodge, an expansive Georgian country estate not far from Richmond, The Coach House is a restaurant with rooms in the modern style. Its continuing development extends to the current planning of a 2.5-acre kitchen garden, due to come on stream in 2018. Inside, well-spaced chunky wood tables and shelves displaying ornamental glassware beneath a beamed ceiling are the setting for a Yorkshire menu influenced by the bounty of the local countryside. Dishes are pleasingly based in British culinary tradition, with modern flourishes in the form of wild ingredients and eye-catching presentation. Chargrilled meats are a feature, including 32-day Galloway rib-eye and Cheviot lamb, served with skinny fries and salad, while the rest of the menu deals in cured sea-trout with oyster mayonnaise, horseradish and apple, and mains such as grilled hake in wild garlic butter with sea spinach, brown shrimps and toasted almonds, or locally reared chicken with hen-of-the-woods and gnocchi. At the end, there are fashionable tweaks to old favourites, adding rhubarb sorbet to custard tart made with duck egg, or tropicalising the rice pudding with coconut and a mango sorbet. A top-value market menu offers the likes of slow-cooked brisket with pancetta, onions and wild leeks for main.
