Sorry to burst your bubble, but there's no vineyard at The Vineyard, although owner Sir Peter Michael's world-class Californian winery supplies some pretty amazing wines in a cellar that runs to a staggering 30,000 bottles. In fact, the super-slick operation is a stylish and sybaritic celebration of the world of wine and gastronomy, with side orders of spa pampering, luxurious accommodation and chic public areas. On the food front, chef Daniel Galmiche's classy, intelligent French cooking delivers breathtaking marriages of flavour and texture, and a lot of fun. All this happens in an elegant dining room, where a sweeping staircase sports a balustrade resembling a grapevine coiling between the two levels, tables are resplendent in white linen, and striking artwork jazzes up the walls. The menu concept is to choose four or five dishes then trust the expert sommelier to match each with a suitable wine. Alternatively, there are two tasting menus: the seven-course Judgement which pairs dishes up with both Californian and French wines, or the Discovery with matching wines chosen from lesser-known parts of the world. Opening the show, pressed confit foie gras might be counterpointed with pear, cucumber and ginger, or pheasant and partridge terrine helped along by orange, radish and Brussels tops. Dishes owe their impact to top-class ingredients rather then left-field combinations or techno trickery - Cornish sea bass with C?vennes onions and lemongrass jus, say or corn-fed duck breast with Cheltenham beetroot and blackberry. Desserts also impress with their technique and creativity - perhaps vanilla and prune parfait with plums and almond biscuits. If you're confident enough to do your own wine matching, around 100 are available by the glass.
