Not one to rest on its thoroughly five-star, contemporary country house laurels, The Vineyard has recently revamped its already luxurious accommodation and chic public areas and added a glossy spa. However, the classy, intelligent French cooking of Daniel Galmiche makes the place a dining destination in its own right. The foodie business goes on in an elegant dining room, where a sweeping staircase sports a balustrade resembling a grapevine coiling between the two levels, tables are dressed in their best whites, and splendid artwork jazzes up the walls. The unstuffy front-of-house team are fully versed in both the menu and - rather impressively - the world-class wine list. The menu concept is to choose four or five dishes and then trust the expert sommelier to match each with a suitable wine. Alternatively, there are two tasting menus - the seven-course Judgement which pairs dishes up with both Californian and French wines so you can vote for your favourite, or the Discovery with matching wines chosen from lesser-known parts of the world. Whichever route you choose, expect excellent marriages of flavour and texture, and a lot of fun. Lyme Bay skate wing with parsnip, cima di rape greens and capers is an intelligently conceived dish built on ingredients of the highest quality. Next up, there is both artistry and complexity in a composition that works a multitude of textures involving loin of veal, Jerusalem artichoke, rainbow chard and hazelnuts. It all ends on a technically impressive and creative high with white chocolate and passionfruit terrine with exotic purées and coconut. By the way, they don't make wine at The Vineyard - nor do they have any grapevines - but they do serve some pretty amazing wines from a cellar that runs to a staggering 30,000 bottles, with around 100 available by the glass.
