An effortlessly cool playground of the beau monde, Zuma appeals to lovers of contemporary Japanese food and slick design. The vibe is high octane, buoyed by the buzzing front bar-lounge offering 40 different sakes. A lengthy roster of in-vogue sharing plates offers crispy fried squid pepped up by green chilli and lime, or, from the robata, succulent pork skewers (stickily glazed) with lively mustard miso, while classics like vegetable tempura and signatures like marinated black cod (wrapped in hoba leaf) find their place too. Desserts, such as yuzu cheesecake with raspberry granité and black sesame, bridge the East-West divide, while sushi is exemplary.
