Five years after the original pop-up Roganic closed back in 2013, Simon Rogan came back to Marylebone with a more permanent set-up. The new incarnation occupies a spartan space of bronze and white textured concrete walls, linen-clothed tables and design-classic chairs. As in Rogan’s other ventures, the kitchen is tuned in to nature and its stunning ingredients – some sourced from his own Lake District farm. Tasting menu fans are in for a small-plate cavalcade of 11 or 17 courses, but if time is of the essence, the set lunch is a steal, and the inspired cooking driven by flavour, freshness and balance. Pulling out some highlights, a celebration of the humble celeriac yields delicious salt-baked discs with caramelised purée, dried enoki mushrooms, tarragon oil and whey foam, while duck comes three ways, the breast timed to perfection and pointed up with a honeyed sauce, a terrine matched with radish and onion, and seared duck hearts highlighted with cheese and potato foam. To finish, there’s a sublime yogurt ice cream with blackcurrant syrup, tarragon oil and burnt milk shards.
