The rooftop views from the terrace of this modern Japanese outfit on the top floor of the former Dickins & Jones building are great, and Aqua Kyoto's dark and slinky dining room shimmers with contemporary style, its moody black, red and gold hues complementing the knife-wielding theatre of a sunken centrepiece sushi bar and robata grill. Happily, it’s not all style over substance – visually striking dishes and top-drawer ingredients are the thing. Open with robata chicken wings with mitsuba and ginger miso, followed by butter-soft Wagyu beef stew with tofu and Japanese root vegetables. Otherwise there's cracking sushi and sashimi, and a sake menu to wash it down.
