There is a timelessness to a sea view of which it is impossible to tire, and the prospect over the hotel gardens to the blue briny beyond from the louvred windows of the Ocean Restaurant is the jewel in the crown of The Atlantic Hotel. Staff run the place with well-polished pride, doing things properly without pomp or undue circumstance, and new chef Will Holland capably maintains the stellar culinary reputation the place enjoys. A taste of the sea is a virtual must, seen to great distinction in an opener of accurately seared scallops with salt cod brandade, carrot remoulade and sweet-and-sour carrot purée, a sensational marriage of sweet and salty savour. That could be followed by tenderly juniper-roasted venison loin with a breaded bonbon of the meat, smoked bacon choucroute, salsify and pickled blueberries, in a glossy, deeply resonant bitter chocolate jus. The showstopping finale is an apple study combining fresh diced fruit, flavoured marshmallow, sorbet and a tuile with praline crémeux and layered almond dacquoise. Chocoholics will gravitate to cacao streusel coated with Guanaja, with 70% chocolate gelée and coffee ice cream.
