A new departure at this Georgian house with Victorian additions is the speciality seafood menu, a daily changing offering bought from a fishing-boat operating out of Tiree. Cracked crab claws with a dip, split langoustines in garlic butter and seared trout with mustard mash are among its strengths, while the main menu deals in shredded duck leg with spiced onion, pak choi and a fried duck egg, followed by twice-cooked pork belly with burnt apple purée in whisky sauce. Finish with date and toffee pudding and caramelised banana, or with the lighter option of pannacotta served with orange and star anise sorbet and chillified tropical fruit salsa.
