You can't get much further away from urban bustle in the mainland British Isles than the northern Highlands, where this Georgian country-house hotel luxuriates in splendid tranquillity below a waterfall on the River Forss, amid 20 acres of woodland. Plenty of pedigree Highland produce is on parade, naturally, starting with Scrabster scallops, smoked mussel, clam, crab, samphire and garden herbs, while the main course could include Aedgay roe deer, wild garlic, turnip, potato fondant and port sauce; or west coast halibut, crab, cauliflower, mouli and smoked hollandaise. Finish up with pistachio and olive oil cake with rhubarb, or whisky and honey pannacotta with Halkirk raspberries.
