Enshrouded by the New Forest, clad in clambering ivy, the Montagu is a brick-built 17th-century hostelry that could charm the birds out of its surrounding trees. Slenderly beamed ceilings within establish the period tone, and an air of unruffled elegance is conveyed by a dining room done in rich mixed fabrics and patrolled by a front-of-house team whose smooth professionalism contributes to the whole experience. Matthew Tomkinson also has a hand in that, getting the best out of the Hampshire bounty that surrounds the place, conjuring direct, purposeful dishes that don't rely on gimmickry for their positive effect. An opening raviolo filled with late season lamb is all about the unctuous, seductive meat, its richness backed up by grilled broccoli and roasted onions in a rosemary-scented broth. That could well be followed by a flawlessly composed fish dish, perhaps slow-poached Cornish monkfish, its firm texture gently emphasised by a rich sauce of smoked bacon and red wine, and by a strongly seasoned accompaniment of crisp potato terrine and a little grilled lettuce, or maybe Alresford roe deer with a croquette of its brisket, glazed beetroot and parsnip purée. At the finish comes a resoundingly successful biscuit-based lemon meringue pie, its tart concentration amply matched by fragrant basil sorbet.
