Thoroughly rooted into the New Forest since Victorian times, Careys Manor has grown organically to encompass a luxurious spa to soothe the soul, and three dining options to tickle the palate. The cream of the crop is Cambium (named for the rings that indicate the age of a tree, since you ask), a classy, contemporary restaurant with a serene mood, easy-on-the-eye tones of cream and mossy green, and oak leaf screens and tree motifs inspired by the forest setting. Headed up by executive chef Alistair Craig, the dynamic team in the kitchen let loose their culinary wizardry on the regional larder to create a modern repertoire combining classic flavour combinations with up-to-date techniques. Rabbit terrine sounds a mainstream enough starter, but here it is helped along by grilled pineapple, and tarragon granita, before another bright, contemporary idea brings the sweet, natural flavour of crab pointed up with crisp apple, nasturtium root and radish. On the more robust end of the spectrum, perfectly cooked haunch of venison is plated with a meat-packed pithivier, red cabbage and swede. There's refinement all the way through to a dessert showcasing rhubarb (parfait, pressed and gel) creatively partnered by ginger oat crunch and tonka bean ice cream.
