The Brighton branch of the chain has all the expected Francophile touches, its walls adorned with posters and risqué pictures, leather-look banquettes running back to back down the centre and small wooden tables. A glance at the menu reveals more than your average bistro fare, with steak tartare with capers, gherkins and shallots followed by braised rabbit in rich cider sauce. The kitchen buys great-quality ingredients and treats them with respect. Chicken liver parfait with raisin chutney and sourdough toast might precede sole meunière, or daube of beef bourguignon with potato purée. Tarte au citron with raspberry sorbet is a good way to finish.
