The village of Fleet played a central role in J. Meade Falkner's smuggling yarn, Moonfleet (1898), and the sparkling-white Georgian hotel, which gazes out over Chesil Beach, is the jewel in its crown. Inside is all squashy sofas and crackling fires, with bracing sea views from a pleasantly airy dining room. Simple modern bistro cooking is the deal, beginning perhaps with pressed smoked chicken terrine with Jerusalem artichoke purée and toasted walnuts, and moving on to roast hake accompanied by spicy chorizo cassoulet with a powdery brioche topping. End with today's favourite combination of chocolate and peanut - tart and ice cream, respectively - in passionfruit coulis.
