Lothian Bridge, DALKEITH, EH22 4TR
'Eat, drink, relax' exhorts the motto of this gastro-pub, and it's easy to comply, the last helped along by friendly, obliging staff and the conversion in 2008 of the old building that combines fabulous boutique bedrooms, and a good dose of rustic chic style with the original oak beams, exposed stone and panelling. Expect welcoming log fires in winter, a bright patio in summer, and whatever the season, Scotland's larder forms the backbone of the kitchen's output. An eclectic menu, supported by blackboards namechecking local suppliers, delivers pub classics as well as inventive but not over-blown contemporary dishes. Pig's cheek with celeriac and cider purée with a baby toffee apple, for example, while mains could bring Scotch game pie with confit and rolled rabbit, pan-seared pigeon breast, prune purée, sprouts and bacon and horseradish mash. There's beer from the independent Stewart's of Edinburgh and a well-chosen wine list to complete the picture.
