The Lake View Restaurant has plush, traditional furnishings and pristine white tablecloths, and is the setting for some good modern dishes. Opening the batting could be a brilliantly crisp-skinned fillet of gilt head bream on soba noodles, seasoned with wasabi and yuzu. A sorbet, perhaps pink champagne, precedes the main course, which may be breast of locally-shot pheasant with wilted Savoy cabbage, a loose carrot and swede purée and thyme-roasted potatoes, in a rich jus boosted with port, or sea bass with crushed potato and crab in brandied lobster cream sauce. A fine dark chocolate fondant with crushed pistachios and whisky marmalade ice cream is well worth the wait.
