With a luxurious Thai spa, and a golf course designed by Nick Faldo, this glossy purpose-built resort hotel on its own 60-acre peninsula jutting into the eponymous lough deserves every one of its five stars. When it comes to fine dining, head for the expansive, vaulted Catalina restaurant with its views across the water and golf course. Noel McMeel's kitchen team is firing on all cylinders, producing thoughtful, exuberant modern Irish cuisine. Vegetarians will be made up with their own menu, and the standard à la carte is just as considered, offering remarkably well-constructed dishes such as a starter of Kilkeel crab that arrives with pickled fennel and chervil, quince water ice, tangerine and black pepper dust. Mains display the same lively imagination and technical flourishes – perhaps roast duck breast matched with roasted and puréed artichoke, black garlic, blackberry and buckthorn gel, fermented blackberry, toasted hazelnuts and thyme jus, or if you’re up for fish, pan-fried hake fillet might come with a hake bonbon, butternut squash fondant and purée, shimeji mushrooms and samphire, all brought to life with a glossy chive emulsion. Round things off with a lush bitter chocolate délice with salted caramel gel, caramel ice cream and glazed pecans.
