Piling on the style with Thai spa treatments, up-to-the-minute golf facilities and restorative views of the Fermanagh Lakelands, Lough Erne is one of the joys of north-west Ireland. Among the dining options, the pick is the Catalina restaurant, named after the Second World War seaplanes that were once stationed on the lough. Views over the 18th hole are a boon to anybody who can't tear themselves away from the putting action, but for those with their minds on dining, the charming service approach is all in keeping with the mood of relaxed civility. Noel McMeel maintains his highly burnished style of locally supplied, traditionally rooted cooking, opening perhaps with a hefty raviolo of mushrooms coated in matching sauce, offset with broad beans and tarragon oil, an earthy prelude to a dish of eloquent venison loin in anise and juniper jus with baked apple, pickled girolles and cauliflower purée, while fish might be Glenarm salmon with creamed leeks in herb velouté. Incomparable technique makes a blackcurrant soufflé with vanilla custard, ice cream and shortbread something special.
