Falmouth isn't short of spa hotels, but there is a pleasingly historic air to the Merchants Manor, a white-fronted house on a hill, built in 1913 for a local brewing family. Bright interiors create a fresh feeling, and the Rastella dining room is done in white linen with vintage candles and designer flatware. Regionally sourced materials are the mainstay, many of them finding their way on to the wood-fired grill, and there's a clear seam of creativity to the menus. Hazelnut-crumbed duck confit with rhubarb poached in grenadine offers succulence and depth of flavour, or there could be Newlyn mackerel with apple and cucumber, as a prelude to locally landed fish of the day with celery in beurre noisette, or Trewithick lamb loin and shoulder, teamed with crab, sea vegetables and garlic purée. Steaks from the grill are abidingly popular, served with ale-pickled mushrooms, onion rings and salsa verde. Finish with Milk and Honey, an assemblage of milk sorbet, Cornish honey, lemon posset and white chocolate, or with cinnamon-spiced pear in mulled wine with cocoa nibs.
