Beautifully located on the Conwy estuary, with views across the marina to the castle, this is a stylish, modern boutique hotel. The smart Grill Room offers a relatively informal setting for straightforward European cooking. Locally-landed fish and seafood feature, maybe in a first course of Great Orme crab with pink grapefruit, avocado purée and caraway crispbread. Main-course seared breast of guinea fowl comes rolled and tied with bacon, accompanied by smooth parsnip purée, honey roast parsnip, boulangere potatoes and red cabbage. Warm Bakewell tart, with vanilla sauce and black cherry and amaretto ice cream, is a good place to finish.
