Owned by the same family for over 40 years, Dormy House perches on a hill above Broadway, its origins as a 17th-century former farmhouse evident in its golden stones, beams and panelling; these days the place is a swish bolthole with looks worthy of an interiors magazine, plus the de rigueur spa for 21st-century hedonists. Done out in sleek, modern style, the airy Garden Room looks through floor-to-ceiling windows onto a verdant backdrop; this is where the chefs get to show what they are made of, and under the leadership of head chef Sam Bowser, the culinary bar has been raised considerably. Delivered via five- or seven-course menus of cleverly constructed, contemporary British dishes, dinner might begin with caramelized veal sweetbreads with asparagus, truffled almond pesto and wild garlic, then progress through a fish course – butter-poached halibut, say, with shellfish broth, razor clam and sea lettuce – to poached chicken highlighted by manzanilla sherry, glazed morels and asparagus. A tricksy rice pudding moelleux soufflé might come with textures of apple and puff pastry to end on an indulgent note.
