Victorian Brockencote stands in 70 acres of landscaped gardens and parkland overlooking the waters of its ornamental lake. The place has been made over with a light touch that blends original features with a sprinkle of contemporary pizzazz. Sweeping pastoral views are best appreciated from either a seat in the Colonial lounge-bar or a table in the linen-swathed elegance of the Chaddesley dining room, or if you are going about things in the right spirit, one after the other. Tim Jenkins is in charge of the gastronomic show, setting high standards with precisely executed modern dishes composed with intuitive culinary logic – an opener of pan-fried scallops and confit belly pork lifted with passionfruit being a case in point. Main courses might see roasted venison loin haunch next to Jerusalem artichoke, chestnut mushroom and hazelnut jus, or another idea might match pan-fried cod fillet with roasted cauliflower, caper and raisin and sea veg. Technically dexterity is once again in abundance at dessert, when white chocolate pannacotta is delivered with apple textures and white chocolate crumb.
