England's best country inns often take a bit of effort to find, and the thatched Red Lion, tucked away among the sinuous B-roads and high hedges around Salisbury Plain is no exception. The Mannings have created an immensely appealing gastronomic oasis, all beams and bare bricks, charming staff, and every effort is made to maintain the pub feel of the place, with comforting pub grub and sandwiches up for grabs. Even when the chef pulls out all the stops, it's still the sort of flavour-driven, down-to-earth stuff that people actually want to eat, as seen in a starter of tortellini packed with scallops and black pudding. Menus are built of the pick of local materials, bolstered by their home-reared pigs, eggs from rescue hens and a productive kitchen garden, with pretty well everything made in house. If you want soul-soothing mains, look no further than herb-roasted guinea fowl breast with girolles and bean cassoulet, or there might be an immaculately executed slab of halibut with caramelised smoked pork jowl and the Mediterranean glow of black olive crumb and pistou. At the end comes raspberry parfait and sorbet with pistchio purée and a sablé biscuit, or Valrhona chocolate crémeux with cocoa crumbs and sea salt.<
