The whimsical name comes from a quote from The Wizard of Oz, and makes it clear from the off that this establishment above Flannels clothes store is as idiosyncratic as they come. The place is the brainchild of Michael O'Hare, and it goes for a minimalist, sharply contemporary look that suits the avant garde style of cooking. A 10-course tasting menu is the deal (a shorter Menu Rapide is available at lunch), and dishes all come on arty, tailor-made vessels – an opener of fabulous 'hand massaged' octopus with caper lemon butter and paprika emulsion, say, which arrives on a tentacle-shaped silver spoon. O’Hare gives full rein to his creativity in a menu full of bold ideas that unleash every techno trick in the book to explore textures, flavours and ingredients. Be prepared for a display of culinary fireworks through dishes such as veal sweetbread slider in a siracha steamed bun with Chinese XO sauce and pickled shiitake mushrooms, or ox cheek with foie gras, puffed wild rice, black truffle and spinach. The excitement continues through to inspirational and revelatory sweet courses – an impressive, highly detailed combination of milk chocolate mousse with lavender and honey, violet ice cream and warm potato custard, perhaps, or a confection exploring the possibilities of praline and passionfruit.
