In a property dating from 1720, the Box Tree has been a beacon on the local restaurant scene since the early 1960s. The timewarp look of the elegant interior - all deep sofas, dining chairs covered in rich fabrics, pictures in gold frames on the walls and antiques dotted around – wouldn’t look out of place in that era, but the food tells a different story. Simon Gueller handles his top-quality ingredients sensitively and intelligently, his modern French style underscored by the classical repertoire and techniques. An amuse-bouche - perhaps onion and lemongrass foam with coriander oil – announces that we’re firmly in 21st-century territory, before starters such as hand-dived scallops with celeriac purée, fresh truffle and Granny Smith apple, or Yorkshire deer tartare with oyster emulsion, egg yolk, and beer-pickled onion – sound ideas that don’t seek wild combinations for the sake of originality. Mains such as stone bass fillet with razor clam and mussel chowder, lemon oil and caviar, or French squab pigeon with roast foie gras, beetroot, and a sharp orange purée also make their point via uncluttered mixtures of flavours and textures. Sound culinary judgment is applied to puddings, too: a textbook passionfruit soufflé, light and fluffy, with coconut ice cream, for instance.
