Many establishments offer a chef's table for those who like to glean plating and garnishing tips from the professionals, but at the South Lodge Hotel's Pass Restaurant, chef's tables are all there are. And quite the show it is, with seating for over two dozen, watching the action in the flesh or on plasma-screen monitors, depending which way you're facing. Ian Swainson has given the menus an extra streak of inventiveness, with dishes exquisitely composed of textural and colour contrasts and given conceptual titles. 'The Colour Merge' is an abstract-expressionist assemblage of tuna sashimi, burrata and tomato from the hotel garden, while the more gently watercolourish 'By The Sea' offers an almost classical mix of clams, sea vegetables and caviar, but with the rakish angle of a white chocolate sauce to boot. The format is six or eight courses, with main dishes like suckling pig, nettle purée, balsamic and garlic full of striking resonance. A dessert called 'Food Porn' is in the event a blameless activity involving strawberries and cream in red wine with elderflower sorbet.
