The Rosette award for this establishment has been suspended due to a change of chef. Reassessment will take place in due course under the new chef. Please note Matt Gillan left The Pass at the end of April 2016. Just 28 or so lucky people at each sitting can grab a pew (or rather a leather banquette or high stool) at this restaurant in the swanky South Lodge Hotel. The kitchen is integral to the experience, with a view of the chefs in action and plasma screens to ensure you don't miss a trick. The waiting staff do an admirable job, but the chefs steal the show, bringing the food to the tables and describing each dish with passion and enthusiasm. New head chef Ian Swainson's six-course lunch menu includes braised razor clams with oyster emulsion, sauce nero and shrimp vinaigrette; onion consommé, porridge, onion foam and thyme oil; pink, black and green cured and barbecue salmon in teriyaki-style marinade and sesame dressing; roasted loin of pork with girolles, grelot onion and truffle sauce; finished off with a cheeseboard, grapes and crackers, a poached rhubarb and puree with rapeseed oil vinaigrette and balsamic meringue and a raspberry and beetroot mousse with textures of chocolate. The eight-course dinner menu features monkfish rolled in squid ink and a potato mousse with confit quail's egg among other creations.
