For the uninitiated, the pass is the part of the kitchen where the head chef gives the final nod to dishes before waiting staff whisk them away, and here at this ultra-modern restaurant in the swanky South Lodge Hotel just 28 or so lucky people at each sitting can grab a pew (or rather a leather banquette or high stool) for a close-up view of the chefs in action and plasma screens to ensure you don't miss a trick. There's a lot more going on in the 6, 8 and 10-course menus than the terse descriptions imply, but rest assured that it's full of lively invention, built on first-class ingredients that work together and are sent out dressed to thrill. New head chef Ian Swainson's six-course lunch menu might include potato mousse with confit quail’s egg, potato strings and butter foam, followed by red wine-braised snails, watercress and garlic. Striking colours are used to great effect in the likes of confit prawns and leek oil with a black and white lasagne, or red-themed idea involving roasted duck breast, beetroot, red cabbage and liver. There’s a cheeseboard, grapes and crackers option before sweet ideas along the lines of poached and puréed rhubarb with rapeseed oil vinaigrette and balsamic meringue.
