With 120 acres of Sussex countryside all to itself, Alexander House is in a Goldilocks spot, close enough to Gatwick Airport for those jetting in and out, but tranquil enough as a getaway in its own right. The handsome red-brick hotel has glam bedrooms, a spa to pamper you into submission, and two smart dining options. Royal-blue upholstery and white linen reinforce the fine dining mood in AG's, the principal dining room (there's also a sleek brasserie called Reflections). The cooking is contemporary, with striking combinations of ingredients and heaps of visual artistry. First off, pan-fried scallops are matched harmoniously with a cauliflower beignet, baby globe artichokes and Serrano ham crisp. The precision can be remarkable, as when well-rested venison loin is teamed with crispy pommes Anna and given a luxuriant gloss with macerated cherries and bitter chocolate. An impressive show is topped off by banana soufflé with toffee ice cream, banana jam and 100% chocolate. The kitchen has all the millennial dietary bases covered with vegetarian, vegan and dairy-free versions of both its set-price and tasting menus.
