The Brasserie is an informal and relaxed eating space that has been completely redesigned. A muted colour palette and stone walls set the scene for starting a meal with cured mackerel, cucumber, dill, horseradish and crème fraîche, or goats’ curd, red pepper, black olives, basil sponge and rocket, followed by tamarind-glazed baby chicken, spring onion mousse, watercress, asparagus and broad bean salad, or Moroccan spiced lamb shoulder, smoked aubergine, bulgar wheat with mint salsa verde. The mobile buffet stations offer a never-ending variety of food throughout the day from breakfast through to dinner – artisan breads, pastries cured meat, salads and the desserts will all prove very tempting.
