The Brasserie is an informal and relaxed alternative to Pennyhill Park's high-flying Latymer. A colourful, stone-walled room, with bright banquettes and lots of windows, overlooks the pool and the huge spa complex. It's a swish setting for lively modern cooking offering a fresh spin on the brasserie repertoire, pairing rabbit terrine with confit leek, date purée, apple and pickled shimeji mushroom. Main courses deliver punchy, tightly-defined flavours, whether you go for classic grilled steaks, or a more enterprising dish of lamb rump roasted in parmesan crust, alongside peperonata, aubergine caviar, garlic purée with lamb sweetbreads and violet potato. Finish with a textbook crème brûlée and lemon madeleine.
