The Brasserie is an informal and relaxed alternative to Pennyhill Park's high-flying Latymer. A colourful, stone-walled room is the setting for a fresh spin on the brasserie repertoire, pairing a 64-degree hen’s egg with bacon jam and onion textures or beetroot-cured salmon with fennel purée, baby beetroot and macerated fennel. Main courses deliver punchy, tightly defined flavours, whether you go for classic grilled steaks, or a more elaborate dish of beef Wellington served with Jerusalem artichoke purée with baby spinach and a red wine jus. Finish with a citrus pannacotta with kumquat orange compote or peanut bar served with caramel chocolate mousse, peanut cookie, peanut caramel and milk sorbet.
