Modern French cooking in a medieval building

Sitting in pride of place opposite the medieval market town's timber-framed Guildhall, the Georgian façade disguises the Great House's true antiquity, which dates from the 14th and 15th centuries. In the same way that the building is rooted into Lavenham's fabric, the elegant restaurant with rooms is a stalwart of the local dining scene, run by chef-patron Regis Crepy for over 30 years. Period character abounds, but the dining room has a thoroughly modern look combining dark oak floorboards, brick inglenooks and panelled walls painted in soft tones. Despite the quintessentially English setting, the skilled cooking is rooted in the great French repertoire. Creative flair suffuses the menu, starting with duck foie gras terrine, its luxuriant richness cut by blackcurrant gel, fig marmalade, raspberry vinegar and milk bread, while main course partners grilled rack of lamb with baby aubergine and courgette, garlic espuma and delicate lettuce sauce. Fish dishes, too, are characterised by vibrant flavours brought together in harmonious, multi-layered combinations, perhaps pan-fried wild turbot fillet with crispy caramelised veal sweetbread, cauliflower and truffle oil mousseline, and a chicken broth and porcini oil emulsion. To finish, there’s a light-as-air confection of chocolate, peanut cream and mascarpone mousse with chocolate and caramel ice cream.
