Built in 1625 for the grand old Dukes of Perth, the pale pink country house by the River Teith stands in 20 acres of gardens in the sumptuous national park that incorporates Loch Lomond and the Trossachs. The building's lack of height may make it look modest enough from outside, but step within, and be prepared to gasp in wonderment. The magnificent period interiors progress from a panelled library with a small concealed chapel to a pair of supremely elegant dining rooms, where silver service, spotless linens and gleaming glassware create an elevated tone. A short carte offers three courses at each stage for modern country-house cooking that keeps an eye on the seasons. Start with marinated turbot, served with the up-to-date accoutrements of cucumber gel and cauliflower purée in a red wine jus, as a prelude to roast rabbit loin with a braised ballotine of the shoulder in grain mustard and maple jus, or perhaps sea trout matched with chorizo, peas and baby gem. Finishing treats include a covetable chocolate and orange gâteau with blood-orange sorbet, or farmhouse cheeses served with toasted fig and walnut bread and membrillo. Then retire gracefully to the silk-panelled drawing room for coffee and petits fours.
