This early 17th-century manor house was built for the Earls of Moray and has been a hotel since the 1930s. It's jam-packed with period furnishings and has a traditional and formal atmosphere. Despite the fact it is in the centre of Callander, once inside the property it is all too easy to forget about the outside world and imagine you're miles from anywhere. The two smart dining rooms match the formal mood, while the kitchen's output is much more modern-minded than you might imagine. Whether you go for the carte or four-course fixed-price menu, expect well-judged dishes that show classical good sense and creative flair. Begin with seared scallops, which arrive with a potato terrine and smoked haddock sauce, or monkfish tail with crispy oxtail and squid. Organic salmon might turn up in a main course with cep gnocchi and verjus sauce, while, on the fixed-price menu, loin of Borders lamb is partnered with an aubergine tart and caramelised sweetbreads, dressed with a thyme jus. Among desserts, dark chocolate and peanut butter cake is served with gingerbread ice cream, with farmhouse cheeses an alternative, served with fig and walnut toast and membrillo.
