Dating from 1757, this splendid mansion, complete with columns and pediment, is set in 100 acres of parkland, including a walled kitchen garden, deer park and formal gardens – hard to believe it’s just half an hour from Birmingham’s city centre. A careful restoration has created a stylish hotel, with elegant bedrooms and fine public areas with many period features. The oak-panelled dining room, with its ornate ceiling and heavily-swagged drapes, enjoys views across the terrace and gardens to the deer park. Ryan Shilton’s contemporary dishes are carefully considered, with thoughtful combinations of flavour and texture. Dinner might begin with sea fresh barbecued mackerel with pickled apple and mustard ‘snow’, brightened with nasturtium flowers. A main course of Welsh lamb rump is served nicely pink, sweet and tender, with glazed belly offering a deeper flavour. Broad beans, mint and yogurt give a pop of green and good fresh flavour. Valrhona chocolate, bay leaf, popcorn is a smooth and silky ganache with a crisp tuile and creamy popcorn ice cream, popcorn crumb and chocolate popcorn.
