It's reassuringly easy to forget you're only a short hop from the A38, so soothing is the prospect over the formal garden and the deer park, where scores of majestic beasts roam as though they owned the place. The kitchen of this palatial Georgian manor house is also served by a walled vegetable garden and beehives, and there may be pigs in the offing soon, we learn. The impressive Four Seasons dining room with its oak panelling, intricate carvings and ornate ceiling is the fitting scene for Ryan Shilton's striking dishes, which are contemporary in execution, but with a strong underpinning of classical principles. That's easily seen in a serving of new season's asparagus with crumbed smoked haddock and a poached egg yolk, dressed in lemon and marjoram, followed by a serving of pinkly succulent cutlets of lamb with chargrilled cauliflower, goats’ curd and golden raisins in a richly aromatic rosemary jus. We may be in landlocked Staffordshire, but a powerful waft of sea breeze enlivens a dish of brill with pickled cockles and sea veg in mussel sauce, while desserts are possessed of great creative impetus, seen in whipped lemon curd scented with wood-sorrel, served with liquorice ice cream and charcoal-black shards of liquorice meringue.
