Glenapp is a Victorian creation in the Scottish baronial style, of the same vintage as Balmoral and almost as turrety. There's something counter-intuitive, but delightfully so, about gazing out to sea from an oak-panelled room, with Holy Island visible on crystal-clear days. The principal business of the kitchen is a six-course dinner menu, including a pre-dessert, with a choice at main and another for either cheese or dessert. A smooth velouté soup, perhaps celeriac with parsley oil, is the start of it, with seared scallops and fennel in dramatic sauce nero to follow. Goosnargh duck breast is served pink with unrendered fat, but gains from sweet-sour red cabbage, butternut purée and a restrained ginger and coriander jus, while fish may be sea bass with goats' cheese agnolotti in blood-orange and star-anise. Dessert may be a sinuously wobbly lemongrass pannacotta with poached pineapple, lime gel and crushed gingernuts. If you've gone for the Scottish cheeses instead, leave room for wholemeal crackers, oatcakes and walnut bread too.
