The West Country's most elegant city has more enviable locations for good hotels and restaurants than you can shake a Bath bun at, and this stylish bolt-hole in a magnificent Georgian townhouse terrace – built for the 8th Marquess of Queensbury in 1771 – is firmly in the top flight. Owners Laurence and Helen Beere have transformed the place into a top-ranking boutique hotel, driven by a passion for hospitality and a keen eye for interior aesthetics. All that, plus a sense of fun, apparent in the New Queensberry Rules asking that guests refrain from using ‘stilts, pogo sticks, spacehoppers, flaming torches or whips at the bar’. The Olive Tree restaurant occupies a series of interconnecting basement rooms bathing in a light, minimalist look. Head chef Chris Cleghorn has honed his craft in some top-flight kitchens (stints chez James Sommerin, Michael Caines and Heston Blumenthal to name but three) and his dynamic cooking and sharp technical skills are showcased here via a choice of seasonal tasting menus, including an impressive one for vegetarians, and an admirably flexible approach allows you to cherry-pick a starter, main course and dessert if you’re not up for the full-on tasting experience. Whichever route you take, the modern British dishes are all built on the finest West Country produce. Flavour combinations are well considered and intelligently executed – scallops might be lifted with shiitake ketchup and leek, or beef tartare given a new spin with smoked egg yolk and caviar. Main ingredients are often given different stages of treatment, then deepened with layers of aromatic and assertively flavoured accompaniments in thoughtful combinations – mackerel, for example, might be cured and torched, then matched with cucumber, horseradish and apple to balance its assertive flavour. Other ideas could be robustly treated fish, perhaps brill served on the bone with celeriac, smoked eel and dashi broth, while venison might be partnered with barbecued cauliflower, raisin, sprout and bitter chocolate. If you’re giving meat a swerve, intelligently composed dishes such as beetroot, frozen goats’ curd, hazelnut and truffle, or chervil gnocchi with carrot, Roscoff onion and hen of the woods mushrooms are a lesson in texture and well-matched flavours. Scintillating desserts also bring superb displays of tastes, textures and temperatures – rhubarb, say, with sheep’s yogurt, baked white chocolate and ginger, or Muscovado tart with coffee ice cream and walnuts. The wine list offers an eclectic international selection that bears the owners’ hands-on stamp.
