Set in the heart of the grandiose sweep that is the Royal Crescent, the likewise-named hotel is a boutique establishment run with consummate professionalism. To the back of the building, The Dower House is home to the elegant main dining room, where a blossoming branch is printed along the wall and a blue and beige colour scheme prevails. This is the relaxing setting for some classically rooted modern British cooking that's sharp and precise, while featuring big flavours and the all-important inventive touch. Blowtorched mackerel with its own tartare comes with artichokes, pressed cucumber and lemon gel, the additional notes of genius being a cream of the smoked roe and a champagne-poached oyster. Then comes roasted brill with crispy ham hock and a hot Caesar salad incorporating fresh anchovies, blanched garlic and a fried quail egg, or perhaps loin and faggot of venison with a Stilton beignet and poached pear. A featherlight but intense anise parfait accompanies deeply caramelised pear Tatin to finish, while a tropical trio brings together mango mousse, passionfruit, and coconut sorbet.
