The Royal Crescent is one of the architectural glories of Georgian Bath, so to be located at the heart of it is a powerful incentive indeed. In fact, the Dower House is to be found in a separate building to the rear, reached by traversing a small lawn and summer terrace, with views over the ornamental gardens. Although there are references to classical tradition on the menus, David Campbell's cooking is firmly in the contemporary mould, with unusual combinations and a strong feel for textures evident all through. The show might begin with tea-cured salmon served in a soup of oyster, shiso leaves and yogurt, garnished with daikon radish and wasabi avocado, to be followed by a main bill of salt-marsh lamb with oregano polenta, engagingly served with a warm Greek salad and olive oil jus. Fish dishes are confidently executed, as when lightly spiced brill turns up with Moroccan quinoa and cauliflower, seasoned with orange and coriander, and desserts maintain the creative tension by rethinking rhubarb and custard into a thickly creamy set custard base topped with shards of lightly poached rhubarb and cubes of gingerbread. With lovely treacle bread and Ibérico ham croquette canapés to go at too, this is a classy performance all round.
