Tim and Emma Ford have perfected the art of finely detailed hospitality in their enchanting Georgian dower house. This is very much a family concern, with son Olly and his dad making a formidable kitchen double act, and Emma choreographing front-of-house with pitch-perfect charm. It all happens in a relaxing room looking out on the garden, with clothed tables and seating in windowpane check, a civilized chatter of contented diners, staff who are attentive without pestering, and the focus is firmly on the food. Rock-solid consistency defines the cooking here - there's no attempt to dazzle with ephemeral trends, just classically-based ideas that are carefully thought through and executed with great technique, as in an opener of pink-roasted quail ballotine, stuffed with wild mushrooms and herbs, and sauced resonantly with Somerset cider and brandy. Fish is handled with exemplary skills: roast fillet of Cornish hake arrives with risotto of Kynance Cove lobster and a well-judged lobster sauce. After that, white chocolate mousse is served atop a wicked dark chocolate brownie, and balanced with vanilla and stem ginger ice cream. The exceptional global wine list is clearly a labour of love, offering a selection that has something for everyone from connoisseurs to gluggers.
