Named after the artist Thomas Gainsborough, who lived in Bath, this handsome Grade II listed building dates from the 18th century and was originally a hospital. Set across a trio of elegant dining areas with sumptuous furnishings matched by pin-sharp service, the restaurant is the setting for thought-provoking combinations of modern British dishes with a hint of Asian fusion, starting with sautéed scallop, smoked haddock chowder, yuzu caviar and parmesan crackling. Mains might bring a fillet of turbot, broccoli purée, crab risotto and lobster bisque, closing with salted caramel tart, ginger and chocolate macaroon, walnut and cocoa nib ice cream.
