Still in the ownership of the Chapman family, the Castle Hotel is the jewel in Taunton's crown, sitting smothered in purple wisteria in the centre of town. Once more firing on all cylinders in the culinary stakes, the principal dining room, Castle Bow, is the preserve of Liam Finnegan. He draws on the Castle's own orchard and herb garden, as well as meticulously selected local suppliers, to furnish a menu of vigorous modern British dishes that achieve real impact. Pasta work is good, as in an opener of Brixham crab tortellini scented with sea herbs, lemongrass and lime, while Quantock rabbit stars in a robust production with goose liver, celeriac and piccalilli. For main, there might be Exmoor venison with parsnip and red cabbage, opulently sauced in whisky, or a carefully considered fish dish such as Lyme Bay cod and grilled octopus in an assertive array of chicory, quince, bacon and tartare sauce. That orchard produce then turns up as apple mousse with pear and cinnamon ice cream, or there could be orange mascarpone cheesecake with macadamias and yogurt sorbet.
