The Wynnstay's Four Seasons restaurant has upped its game since a new head chef took the helm in 2015, producing modern British cooking based on reinvented versions of dishes taken from the Wynnstay's 1960s' menus. Ham hock terrine with a soft poached egg, asparagus and pea shoots is helped along by a piquant wholegrain mustard dressing, or you might start with a classic French onion soup with a gruyère croûte. Main-course sea bass is matched with sautéed potatoes, peas and chorizo, or if you're in the mood for meat, there could be the retro delights of pan-seared Gressingham duck breast à l'orange. Dessert brings a textbook crème brûlée with shortbread.
