A mere six miles from foodie Ludlow, Old Downton Lodge feels lost in a rural idyll overlooking the hills of the Welsh Marches. The country-chic restaurant with rooms consists of a fascinating cluster of buildings – medieval, half-timbered, Georgian – around a courtyard filled with herbs and flowers. The sitting room occupies the old stables, while the restaurant, which dates from Norman times, has the feel of a medieval great hall with stone walls, tapestry and chandelier. Dinner takes the form of daily-changing five-, seven- and nine-course, menus, all built on local, home-grown and foraged produce of the highest order. Head chef Karl Martin's cooking has an inherent simplicity and intuitive balance, kicking off with an amuse of chicken parfait with chicken, almond and watercress to pave the way for crisp-skinned stone bass matched with caviar, sour cream, cucumber and wild rice. These are highly original compositions where everything is there for a good reason: main course stars rose veal counterpointed with onion, crispy kale, celery, truffle and black garlic, or there may be Wagyu beef with broccoli, sea greens, peanuts and blue cheese. The results are impressive all the way through to a thought-provoking pudding of beetroot sorbet, blackberries, oats, apple and celeriac.
