Owned by the Duke of Roxburghe, this turreted Jacobean country-house hotel is tucked in woodland close to the River Teviot. The informal lounge and bar menu is available throughout the day and in the evening more choices appear on their à la carte, very recognisable as Albert Roux inspired dishes. For dinner, perhaps start with Scottish blue lobster mousseline wrapped in spinach with chive butter sauce, followed by confit and roast free-range Pugh’s piglet, chived mash potatoes and fresh sage jus. To finish, try seasonal caramélise lemon tart with seasonal berries or a selection of British and continental cheese, prune chutney, toasted fruit and walnut bread.
