An extensive kitchen garden and a smokehouse in the 17-acre grounds of this handsome Edwardian mansion in the Wye Valley attest to the culinary focus at Llangoed. Originally Jacobean, Clough Williams-Ellis (of Portmeirion fame) rebuilt the place in the early 20th century, so old-school elegance abounds, with luxurious lounges full of original features, fine furniture, and original artworks by Whistler and Augustus John. Nick Brodie and his team in the kitchen put organic pickings from the garden into 3-course à la carte menus of polished modern British cooking in a dreamy Wedgwood-blue-and-white setting. What arrives is savvy, sophisticated and complex stuff, including fashionably foraged and fermented ingredients and a whiff of the Orient – perhaps beef tartare updated with bone marrow, crisp tendon, anchovy cream and cured yolk, then a main course matching Welsh lamb with soft polenta, milk skin, samphire, anchovy and wood sorrel. The presentation of each plate is a visual treat, and there's no lack of invention among desserts either; a dish starring dark chocolate, say, supported by smoked walnut, caramel, aero and frozen yogurt.
