Starting life as a windmill in 1806, the Twr lays claim to being Wales's first hotel dedicated to showcasing contemporary art. And there it is, striking modern paintings and prints taking centre-stage in the low-lit Blas (Taste) dining room. The cooking is equally aesthetically conceived, with bold assemblages delighting eye and palate. Start with seared scallops, creamed celeriac, apple and hazelnuts, before striding on to pork in three guises – tenderloin, soft belly and a ham hock croquette – served with leeks in a calvados jus. Resonant fruit flavours shine forth in the raspberry-lemongrass gel and lime and rosemary sorbet that accompany a fashionably disassembled lemon tart.<
