A stone-built, wisteria-draped Cotswold country inn on a village corner makes an appealing prospect when its outdoor tables under the sunshades fill up. Allied with the Daylesford Estate, an expansive organic farming business, it makes a virtue of the natural approach, with horsehair mattresses in the guest rooms and a menu informed by nose-to-tail butchery and locally grown produce. A crispy egg with truffled Jerusalem artichoke broth and watercress is a sound opening move, or you might plunge into a compendious salad of Crown Prince squash, whipped goats’ curd, pickled walnuts and leaves. Notwithstanding the landlocked location, there are inspired fish dishes, as witness the skrei cod in shellfish sauce that comes with brown shrimps, roasted leeks and sea herbs, or there could be rabbit (of course), served with a ragout of its offals, hispi cabbage, carrots and black garlic. Charcoal-grilled steaks remain a favourite, and there are temptations galore at the finishing line, including passionfruit soufflé with dark chocolate ice cream, or an assemblage of walnut parfait and sponge with orange curd and crème fraîche. Or abdicate the need to choose with the six-course taster.
