The leafy banks of the River Trent make an interesting contrast to the contemporary exposed ducting, industrial-style lighting, stone floors and glazed frontage of the stylish Boathouse. The kitchen sources locally and seasonally and uses modern cooking techniques such as sous-vide to squeeze every molecule of flavour from the ingredients. Contemporary brasserie dishes run from an appetiser of hand-dived scallops with black pudding, compressed apple, air-dried ham and lemon emulsion, to main courses of fallow venison with pomme purée, marmalade-glazed onions, parsnips and confit beetroot, or smoked haddock, cod and crayfish pie. Finish with passionfruit cheesecake with mango sorbet and white chocolate mousse.
