The leafy banks of the River Trent make an interesting contrast to the contemporary exposed ducting, industrial-style lighting, stone floors and glazed frontage of the stylish Boathouse. The kitchen sources locally and seasonally and uses modern cooking techniques such as sous-vide to squeeze every molecule of flavour from the ingredients. Contemporary brasserie dishes run from pan-fried scallops with belly pork flavoured with honey and soy accompanied by Japanese vegetables and wasabi, to main courses of roast pheasant breast with potato terrine, carrot purée, balsamic fig and roast roots, or beer-battered haddock fillet. Finish with plum frangipane tart with limoncello sorbet and vanilla meringues.
