Marmadukes is a boutique townhouse hotel of the latest vintage, conjured from a Victorian gentleman's residence a little way from the medieval city walls. Antique furniture fills the public spaces, and The Park Restaurant is a bright conservatory space with a skylight and glass frontage, grey wood tables and matching walls hung with modern artworks. The drill here is Adam Jackson's six-course dinner menu, an extended showcase of quality Yorkshire produce and the kind of ingredient-centred approach that brings the concentrated best out of all elements in a dish. Principal components of each course are listed on the menu, which might open with burrata, beetroot and balsamic, served with focaccia. Successful compositions include crisp-skinned mackerel partnered with pickled radish, peas and nasturtiums, a main dish of tenderly pink pork fillet, braised cheek and crackled ear with romanesco, tart apple and puréed cauliflower, and a simple but memorable dessert of chocolate parfait with cherry variations – puréed, macerated and dried sour fruits. For a supplement, there's the option of a cheese course, perhaps deliciously oozy Vacherin Mont d'Or with truffle honey.
