Swinton Park makes quite an impression, with its solid-looking tower and castellated walls hung with creeper. The interior boasts antiques and family portraits (the Cunliffe-Listers have owned the property since the 1880s), that enhance the feeling of being in a stately home. The dining room is particularly grand, with its high carved ceilings, gilt-framed mirrors and plush drapes at the windows. This is where to experience Simon Crannage's modern British cooking, each dish carefully considered in terms of mixing and matching various components, with seasonality to the fore. A winter salad (all from the four acres of kitchen garden), raw, pickled and cooked, is accompanied by goats' cheese and truffle cream sauce to make an appealing starter, or there might be flame-cooked mackerel and tartare balanced by apple and dill-flecked cucumber purée. Ingredients are of the first order and the kitchen's technical skill is apparent in main courses: pink venison loin (from the estate) comes with braised chicory, squash, buckwheat adding additional textural contrast and a rich jus added at table, or accurately timed roast halibut fillet with mussels, fennel, samphire, chard, jeera and poached potato. Go out on light, smooth chocolate marquise complemented by the savoury flavours of parsnip purée and ice cream.
