The location, in a quiet cul-de-sac near the cathedral, may be discreet, but Roger Hickman's calm and comfortable restaurant is a popular place, a refined and elegant setting for original artworks, smartly laid tables, and confident, attentive service. The modern British cooking is equally refined, stylishly presented and demonstrating a fine grasp of technique and seasonal opportunities. The wine list is well worth exploring, and fixed-price menus and tasting options are offered at both lunch and dinner. You might begin with a heritage carrot salad with lemon yogurt and dukkah crumb, or blowtorched mackerel with mackerel mousse, the flavours of gooseberry and horseradish a sharp contrast to the fish. Main course roast partridge comes with truffle mash, parsnips, sprouts and bacon, while butternut squash gnocchi with shiitake mushroom, cavalo nero and sage and chestnut crumb is an excellent wintery vegetarian option. A dessert of forced rhubarb with blood orange cake, custard and ginger ice cream shows spring is reassuringly just over the horizon.
